(Note that you need to start making it early in the morning so that it ends in the afternoon. If you start in the afternoon it won't finish until dawn..)
Simmered Chestnut (Making Bonui Chestnut)
Ingredients: Fresh chestnuts 500g (weight after peeling), soy sauce 4T, sugar 300g (if you don't like sweet use 200g), cooking wine(or wine) 4T
How To Make:
- Soak the chestnuts in salt water for 20 minutes to remove any possible bugs inside.
- Select floating chestnuts from water then pour enough water just enough for them submerge then add a spoonful of baking soda.
- Peel off only outer shell leaving inner skin intact after soaking them into water(try removing as much inner core as possible, please refer to the picture below). If peeling is too difficult :boil them for about five minutes let them cool down before peeling
- Pour enough water just enough for peeled off chestnut submerge then boil them on low heat about 20-30 minutes.
- After change water (with lukewarm water) then again boil them on low heat about another 20-30 minutes.
- After half an hour take off from heat then remove remaining fuzzes using skewer stick.
- Pour enough water just enough for defuzzed chestnut submerge add sugar then boil on low heat about another twenty minutes.
- Add soy sauce and wine continue boiling on low heat ten more minutes
- Put simmered chestnut into sterilized jar voila! You have your sweet tasting simmered chestnut!
- This bonui-chestnut can be enjoyed both as healthy snack or dessert after meal its rich flavor goes well with any dish!
